Risotto is one of the most popular of recent trending meals in the world. It's enjoyed by millions every day. It is simple, it's fast, it tastes delicious. They're fine and they look fantastic. Risotto is something that I've loved my entire life.

To get started with this recipe, we must first prepare a few components. You can cook risotto using 9 ingredients and 9 steps. Here is how you can achieve it.

The ingredients needed to make Risotto:

  1. {Prepare 2 cup of uncooked arborio rice.
  2. {Prepare 1/2 cup of chopped onion.
  3. {Prepare 2 clove of garlic minced.
  4. {Get 1/4 cup of extra virgin olive oil (or more to taste).
  5. {Take 1/2 cup of white wine (may omit).

Instructions to make Risotto:

  1. Saute onions in olive oil. Once the onions begin to look transparent, add the garlic and continue cooking about 3 minutes. Add arborio rice and stir to combine..
  2. Add wine and allow to reduce..
  3. In a separate pan, add saffron and turn on heat to medium. Once the threads begin to move/ "dance" remove from heat..
  4. With a mortar and pestle, crush the threads..
  5. Add chicken broth to release the yellow from the threads..
  6. Add to risotto..
  7. Add broth and allow to reduce, stirring occasionally..
  8. When desired consistency, add cheese and stir to combine..
  9. Garnish with fresh parsley and a couple of crumbled saffron threads..
